It is easy to extract the pigments from a leaf, but it is a challenge to separate and identify the distinct types of pigments from that mixture. Paper chromatography is a technique that allows the different plant pigments to be distinguished. Pigments are extracted onto the absorbent chromatography paper and the tip of the paper is dipped into a solvent. As the solvent soaks into the paper, the pigments dissolve and get carried along in the flow of solvent. After identifying the different pigments you will calculate the (Rf) of each pigment:

After a period of time the different pigments in the mixture end up spread out between the original spot and the point the solvent reaches.

To use chromatography to separate and compare the photosynthetic pigments found in algae and green plants that grow in different light conditions.
Safety goggles, centrifuge, mortar and pestle, acetone:water (80:20), capillary pipettes (25 µL), TLC plate (cellulose on plastic), 600 mL glass beakers, Al foil, solvent (petroleum ether:acetone 92:8), fine grain sand, plant material, centrifuge tubes.

I would suggest using a mortar and pestle to grind up the leafs before beginning the experiment. You could get much more vibrant colors on your chromatography strip if you do. This is a great science demonstration to accompany discussion of what pigments are in leaves. Those colors are actually best seen in the leaf before it begins to change color. Green leaves work best to show all the pigments. Then you can guess the colors that will show once the plant begins to turn for the winter.
